Salads & Summer Soups

Gazpacho

Gazpacho is a great summer time appetizer served ice cold.  Serve it alone or with chips, shrimp. I like topping it with a dollop of sour cream.

Ingredients
1 (32-ounce) cans diced tomatoes in puree
1 - 2 tablespoons cayenne pepper sauce or to taste
1/2 cucumber (seeds removed), cut into chunks
1 small red onion, cut into chunks
2 jalapeno or Serrano peppers, seeded & coarsely chopped
2 ribs celery, from the heart of the bunch, chunked
Handful fresh cilantro leaves - about 1/4 cup
1 lime, juiced
Coarse salt and black pepper to taste
Lime wedges, for garnish

Directions
Working in batches, combine all ingredients in a food processor & pulse grind into a thick soup. Adjust seasonings. Pour soup into a thermos & chill until ready to serve. Serve in chilled glasses with wedges of lime or lemon for garnish.
